Angels on Horseback

This recipe is intended as a template – you can drizzle the “angels” with lime or a dash of hot sauce, you could bake them instead of grilling, or you could coat them in batter and shallow fry them in hot oil. Whatever method or preparation you choose, angels on horseback make a fantastically tasty canape or starter.

  • 12 oysters, shucked and removed from their shells
  • White pepper
  • 12 rashers of bacon, thinly sliced



Sprinkle the oysters with white pepper.


Wrap each oyster in a rasher of bacon and place on skewers (three or four per skewer depending on size).


Cook under a medium grill for 3 minutes.


Serve on hot sourdough toast.
