Our salmon are farmed in fisheries in the north and north-west of Scotland.




Our whole salmon are ideal for special occasions, ramping up the sense of theatre when presented at the dinner table. The flesh yields a silky texture, bold flavours and an array of nutritional benefits.

Rich in B vitamins, minerals and omega-3 fatty acids, salmon used to be the preserve of the wealthy, but thanks to the rise of aquaculture everyone can now enjoy this extraordinary fish all year round.

Buying whole fish opens up a world of possibilities for the home cook.

If you have a fish kettle then you can poach the salmon in a court-bouillon. Due to the size of the fish, though, most recipes involve baking it in the oven – en croute, encased in puff pastry; baked in a salt crust; or simply baked with herbs and lemon juice. Whatever recipe you choose to follow, placing a carefully cooked whole salmon in the centre of the dinner table is the starting point for a communal dining experience everyone present can cherish.

Whole salmon are best eaten as fresh as possible. Keep refrigerated between 0˚C and 5˚C and consume within three days of delivery. If freezing, do so on the day of delivery and consume within two months. We recommend defrosting overnight in the fridge, placing the salmon in a colander over a bowl.

How We Package Your Fish

1. First we vacuum pack individual fish portions (if the fillets are small then we will pack them in pairs).
2. Each portion is then weighed and clearly labelled.
3. We add frozen chill packs, which contain non-toxic gel, to a polystyrene box.
4. We pack your order so the chill packs distribute the cold evenly throughout your fish and seafood, ensuring maximum freshness.
5. We seal the box with packing tape and hand it to our courier, who will deliver it to you within 24 hours (or 48 hours if you live in the Scottish Highlands).

What is the minimum order?

There is no minimum order.

How much is the delivery charge?

From Wednesday to Friday, delivery for orders under £50 costs £4.95. Orders over £50 qualify for free delivery.

On a Saturday, delivery for orders under £100 costs £9.99. Orders over £100 qualify for free delivery.

Which courier do you use & where do you deliver to?

We work with DPD and we deliver anywhere on the UK mainland.

When do you deliver?

Our delivery days are Wednesday, Thursday, Friday and Saturday. Due to the nature of the fresh fish supply chain and to ensure you receive the freshest possible fish and seafood at an affordable price, we do not deliver from Sunday, Monday or Tuesday.

Where do you source your fish from?

Each product page clearly says where it comes from. We deal with a range of suppliers, including fish markets in north-east Scotland and reputable aquaculture businesses on the north-west coast of Scotland and in East Lothian. Freshness and quality mean everything to us and we only engage with partners who share our values.

Can you advise on the amount of fish to buy for a special occasion?

We recommend allowing a portion size of between 160g and 200g per person. However if you are catering for a larger amount of people than normal or planning a special meal then our team of fishmongers will be happy to advise you. Call us on xxxx or email, Tuesday to Saturday.
