Description

Our halibut fillets come from fish raised on an award-winning fish farm on Gigha, an island on the west coast of Scotland.

The firm, creamy and meaty flesh of the flat fish has long been prized by chefs and gourmets. Halibut is endangered in its native environment of the Atlantic, an unfortunate fact that has led to the growth of farmed halibut.

Halibut fillets are excellent poached in fish stock or white wine or carefully pan-fried and served with subtle accompaniments that won’t overpower the delicate flavour of the fish.

Gigha Halibut, our supplier, was established in 2006 and began harvesting premium fish a year later. The business has won several awards for its products and practices, including best food producer in the 2014 BBC Food and Farming Awards.

Halibut fillets are best eaten as fresh as possible. Keep refrigerated between 0˚C and 5˚C and consume within three days of delivery. If freezing, do so on the day of delivery and consume within two months. We recommend defrosting overnight in the fridge.

How We Package Your Fish and Seafood

1. We vacuum pack fish portions in pairs and whole fish individually. We vacuum pack scallops in quantities of 500g. Oysters and lobsters are placed in a box.
2. Each portion is then clearly labelled with the species, who packed it, the date it was packed and a fresh use-by date.
3. We add frozen chill packs, which contain non-toxic gel, to a polystyrene box.
4. We pack your order so the chill packs distribute the cold evenly throughout your fish and seafood, ensuring maximum freshness.
5. We seal the box with packing tape and hand it to our courier, who will deliver it to you within 24 hours.

Impact of Covid-19

We are pleased to say that as the lockdown eases deliveries are now running on schedule.

However we are still experiencing minor disruption to supply and distribution chains, so the availability of certain products remains subject to change.
