Hake is a superb alternative to cod, with plentiful stocks in UK waters making it a sustainable choice.
A close relative of both cod and haddock, hake is a long, rounded fish that’s hugely popular in Spain, where it’s known as merluza. Such is its popularity in Spain, in fact, that most British-landed hake is exported there, overfishing having seriously damaged stocks of Atlantic southern hake and Mediterranean hake.
The raw flesh of hake is soft and dense, turning meatier and flakier when cooked. Like cod, hake possesses a sweet and delicate taste that’s complemented by strong flavours, making it a terrific choice for fish curry or spicy fish tacos.
Hake has a versatility that’s equally beloved by professional chefs and enthusiastic amateurs – try it steamed, poached, shallow-fried or roasted in the oven. Like its cousin cod, hake is delicate and vulnerable to overcooking, so avoid exposing it to the naked heat of a grill.

Hake fillets are best eaten as fresh as possible. Keep refrigerated between 0˚C and 5˚C and consume within three days of delivery. If freezing, do so on the day of delivery and consume within two months. We recommend defrosting overnight in the fridge.
1. We vacuum pack fish portions in pairs and whole fish individually. Scallops are also vacuum packed, while oysters and lobsters are placed in a box.
2. Each portion is then clearly labelled with the species, who packed it, the date it was packed and a fresh use-by date.
3. We add frozen chill packs, which contain non-toxic gel, to a polystyrene box.
4. We pack your order so the chill packs distribute the cold evenly throughout your fish and seafood, ensuring maximum freshness.
5. We seal the box with packing tape and hand it to our courier, who will deliver it to you within 24 hours.
Care has been taken to remove the bones from this fish, although some may still remain.
From Wednesday to Friday, delivery for orders under £40 costs £4.95. Orders over £40 qualify for free delivery.
On a Saturday, delivery for orders under £100 costs £9.99. Orders over £100 qualify for free delivery.

Our delivery days are Wednesday, Thursday, Friday and Saturday. Due to the nature of the fresh fish supply chain and to ensure you receive the freshest possible fish and seafood at an affordable price, we do not deliver on Sunday, Monday or Tuesday.

The journey begins with the crews of fishing boats, who work long hours in often hazardous conditions to bring back their catch.
