Lemon sole is an oval flat fish with sweet, delicate white flesh. It can be used in any recipe for sole, including the classic sole meunière – a gentle, buttery delight.
The sole family, which also includes Dover, sand and thickback sole, was held in high esteem by the ancient Romans, who called it solea Jovi, or Jupiter’s sandal. During the reign of French king Louis XIV sole became a royal dish, prompting the great French chefs of the 19th century to deploy their skills creating recipes for sole. There is therefore no shortage of ways to prepare lemon sole, whether baking, poaching, grilling or steaming, much of it in the French classical tradition.
Lemon sole is a lean, low-calorie fish, making it suitable for those looking to lose weight while keeping their protein intake at a healthy level.

Lemon sole are best eaten as fresh as possible. Keep refrigerated between 0˚C and 5˚C and consume within three days of delivery. If freezing, do so on the day of delivery and consume within two months. We recommend defrosting overnight in the fridge, placing the lemon sole in a colander over a bowl.
1. We vacuum pack fish portions in pairs and whole fish individually. Scallops are also vacuum packed, while oysters and lobsters are placed in a box.
2. Each portion is then clearly labelled with the species, who packed it, the date it was packed and a fresh use-by date.
3. We add frozen chill packs, which contain non-toxic gel, to a polystyrene box.
4. We pack your order so the chill packs distribute the cold evenly throughout your fish and seafood, ensuring maximum freshness.
5. We seal the box with packing tape and hand it to our courier, who will deliver it to you within 24 hours.
From Wednesday to Friday, delivery for orders under £40 costs £4.95. Orders over £40 qualify for free delivery.
On a Saturday, delivery for orders under £100 costs £9.99. Orders over £100 qualify for free delivery.
We work with APC Direct and deliver anywhere on the UK mainland where 24-hour delivery is available.

Our delivery days are Wednesday, Thursday, Friday and Saturday. Due to the nature of the fresh fish supply chain and to ensure you receive the freshest possible fish and seafood at an affordable price, we do not deliver on Sunday, Monday or Tuesday.

The journey begins with the crews of fishing boats, who work long hours in often hazardous conditions to bring back their catch.
When they return to shore the catch is then sold at the market and transported to our premises, where the fish are prepared, vacuum-sealed, packaged and delivered to your door within 24 hours.
